As an oenologist specialising in the management of wine ageing and the prevention of oxidation, I was involved in developing the first method for the direct in-tank analysis of fermentation kinetics (ALF and MLF) through the precise measurement of COâ‚‚ produced, enabling continuous monitoring and proactive management of the winemaking process. We are working on the digitalisation and modernisation of tools to manage every stage of the winemaking process.
