Sustainability applied to sparkling wines
Joël Rochard started his career in Champagne working on the environment 40 years ago. He created the sustainable development department of the French Institute of Vine and Wine in 1997. He is an expert at the OIV and has written several books on effervescents, heritage and sustainability. His intervention focuses on the sustainability of sparkling wines, which became a major concern at the end of the 20th century.
Sparkling wines are produced in regions with cool climates and high rainfall. Harvesting grapes for sparkling wines is often manual and requires a large workforce.
