[SWF25] The impact of corks when drawing sparkling wines

Speakers: Sara PINHEIRO - PhD student | Faculty of Science and Technology, Universidade Nova de Lisboa Francisco CAMPOS - Head of R&D | Amorim This video explores the impact of corks (cork vs. capsule) on the aromas and evolution of sparkling wines. A study conducted over several years shows that cork stoppers preserve fruity aromas better and reduce oxidation. Chemical and sensory analyses reveal a marked preference among tasters for cork-stoppered wines. Interest in these technical stoppers is growing, particularly in Champagne, with solutions adapted to both small and large producers.
