Influence of vintage and grape maturity on volatile composition and foaming properties of sparkling wine from Savvatiano (Vitis vinifera L.) variety

A study of the influence of grape maturity on the chemical and sensory properties of sparkling wines made from Savvatiano, a white grape variety widely grown in Greece. The study examines how different levels of grape maturity affect the chemical composition and foam characteristics of wines after 15 months of bottle ageing.
